( Originally Published Early 1900's ) The leek is managed like the onion and upon the same kinds of soils. It is grown for its leaves and stems which later are usually blanched toward the close of the season, by having the earth drawn up around them. Commonly the seed is sown in early spring and the seedlings transplanted about the beginning of summer. The plants are set in shallow trenches so as to allow of each blanching by drawing earth up toward them. They are stored in the same way as celery and marketed like spring onions. The Large Flag is one of the best known sorts, Scotch Flag, or Musselburgh, is also a favored variety. |
